pw_bluetooth_sapphire: Use Write instead of UncheckedWrite Various parts of LowEnergyConnector were using UncheckedWrite. Upon closer inspection, this was only because the default values of some test data were out of range for the fields that they were writing into. Emboss checks resulted in test failures because of these out of range values. Instead of using UncheckedWrite, we switch to using in range test values.
