boards: nxp: lpcxpresso55s69: use mapped partitions

Replace the fixed-partitions layout with zephyr,mapped-partition and add
the ranges properties required to translate partition addresses through
the IAP flash controller.

Keep the existing Kconfig overrides for CPU1 and TF-M layouts.
