samples/shields: x_nucleo_iks01a2: Add shub mode sample The x_nucleo_iks01a2 shield supports both standard (Mode 1) and sensorhub (Mode 2) modes through proper dip switch selection. For more information please refer to: https://www.st.com/en/ecosystems/x-nucleo-iks01a2.html This commit moves the original (Mode 1) support under 'standard' directory and adds the Mode 2 support into 'sensorhub' directory.
