samples: subsys: Fix ESP32 SoCs support

Fix ESP32 and ESP32-S3 support:

* Add Espressif overlays for default and remote target.
* Add remote targets for Espressif boards.
* Fix remote runtime by increasing the stack size in case of ESP32.
* Make the test cycle config option.
* Make the test stacks config options.
